La seguretat alimentària és un àmbit de treball molt ampli. Des del punt de vista químic-analític, inclou la investigació de nombrosos compostos orgànics (contaminants i/o residus) que poden estar presents en els aliments, generalment a nivells molt baixos de concentració, (sub)-ppb. Per dur a terme aquesta investigació, es requereixen mètodes analítics sofisticats, en els quals es fa ús de tècniques cromatogràfiques acoblades a espectrometria de masses. Entre els diferents treballs que s'estan realitzant actualment a l'institut cal destacar:

  • Determinació de residus de plaguicides en aliments (incloent screening per HRMS i quantificació mitjançant LC-MS / MS i GC- (MS) / MS.
  • Control i prevenció de la migració química en envasos
  • Determinació de contaminants orgànics persistents (screening i quantificació) mitjançant GC- (EI) - MS / MS, GC- (APCI) -MS / MS, GC- (EI) -TOF MS i GC- (APCI) -QTOF MS
  • Determinació de micotoxines en aliments (screening i quantificació) mitjançant LC-QTOF MS i LC-MS / MS
  • Determinació de micotoxines en l'entorn de l'aqüicultura (ingredients per a pinsos, pinsos per a peixos, organismes aquàtics)
